Crockpot Salsa Chicken

Ingredients:

  • 4-5 Chicken Breasts

  • ½ Cup Sliced Onion

  • Juice of 2 Limes

  • Taco Seasoning

  • 1 to 1 ½ Cups Salsa (enough to mostly cover)

  • Salt & Pepper

  • 1 tsp Sugar

Additional Ingredients for Serving:

  • Flour or Corn Tortillas (I used tostada shells-the flat ones)

  • Lettuce Leaves (for wrapping) or shredded lettuce (for on top or like a salad)

  • Sour Cream

  • Cheese

  • Cilantro

  • 2 Cups White or Brown Rice

In a 6-quart crockpot, lay your chicken breasts down, covering the bottom and try to make it as flat as possible. On top, later the onion, taco seasoning, and lime juice. Cover with a thick layer of salsa, then add salt, pepper, and the sugar. Cook on low for 6-7 hours, or high for 3-4 hours.

Take the chicken out about 20-25 minutes before serving and shred it. Stir it back in the crockpot for the remaining amount of time. Serve your preferred way!

There are plenty of ways to eat this, which is one reason I love making it so much. Tacos, burritos, salads, over rice, in lettuce wraps, etc. Its versatility makes it a family favorite in my house, and probably yours as well!
