Chicken Bacon Wrap


Cooking a whole chicken can just be so satisfying. You get so much for paying so little! Whether it’s roasted in the oven, or slow cooked in the crockpot, you just know that it’s going to end up giving you more than a meals worth. Make it easier on yourself and debone the chicken before you put it away.

I have recently discovered what my favorite thing is to do with some of that left over chicken. Wraps! The one I’ve been devouring for weeks now is a Chicken Bacon with Avocado Cilantro Dressing. It’s incredibly flavorful, and you really only need one to feel full, without too much of the guilt.

Get a flour tortilla (you can also do lettuce wraps if you’d like) and layer on chicken, cheese, and bacon. Add a little bit of diced onion and shredded lettuce if you’re feeling it, just to add a little more freshness. Throw on a splash of lemon juice and then pour on the dressing and you’re good to go!

The Avocado Cilantro dressing is a yogurt based dressing that’s just so amazing. It’s usually found in the refrigerated section by the produce with the other dressings. You can make your own, also. There are a few recipes I have found just by a quick Google search. But if you can find the Boathouse brand, that’s my personal favorite.

For those of you out there who can’t stand the taste of cilantro, you can substitute whatever kind of dressing you prefer. The Mango Chipotle one from Boathouse is also extremely good, and will make your taste buds dance.
