Easy Taco Soup

Taco Soup

Taco soup is a huge favorite in our house. Its quick, easy, and there’s hardly any prep work to it. It can be made on the stove, or in a crockpot. We usually don’t have leftovers for long with this meal!

1lb(ish) Lean Ground Beef 1 Medium Yellow Onion, chopped 4 Garlic Cloves, chopped 2 Pkg. Taco Seasoning 1 Pkg. Ranch Seasoning 1 16oz Can Diced Green Chiles 2 or 3 15.5oz Cans Dark Kidney Beans 1 15.5oz Can Whole Kernel Corn 1 14.5oz Can Stewed Tomatoes 1 14.5oz Can Diced Tomatoes (preferably Fire Roasted, or a Mexican Flavor. I found Cilantro and Lime Juice) Shredded Cheese Sour Cream Fresh Cilantro Lime Juice Tortilla Chips or Rotini Pasta (however you want to eat it, if you want to add something to it) To make it thinner, add 1 ½ cups of water, and one crushed chicken bouillon cube.

Over medium high heat, start off by browning the ground beef in a pot. I use a 5 quart one and that does well enough, so it doesn’t have to be some fancy stock pot. Add in the garlic and onion, and cook until the onions are tender. Then add in the can of green chiles. Cook until the chiles are fragrant. Don’t drain off any of the liquid, as it will help with the base. Add in the 2 packages of taco seasoning and the package of ranch. At this point, you can transfer everything to the crockpot, if that was your plan, or continue in the pot.

Start adding all things canned. Don’t drain off the liquids, as it adds to the flavor. This leaves the soup pretty thick. If that’s what you’re going for, then leave it to simmer for about 20 minutes and then serve. If you want it a little thinner, take 1 to 1 ½ cups hot water, crush up a bouillon cube (chicken or beef works fine), and add before letting it simmer.

When you’re ready to serve, dish up into bowls. Then add some cheese, sour cream, cilantro, and some lime juice if you’d like. My husband likes to eat his thicker, with tortilla chips. He treats it as if it’s a dip. I prefer to make up some rotini pasta and serve with that. It’s really your preference.

And that’s it! Super simple, super delicious, and can easily become a staple in your house. You could also switch a can of the kidney beans for a can of black beans as well. You could also add jalapenos, use ground turkey or shredded chicken, it’s really up to you!!
