Foil Potato and Vegetable Packets

Foil packets cooked on the BBQ are one of our favorite sides, you can even make them a whole meal by adding meat in. They are perfect in the backyard or even cooking on the campfire while camping. One of my favorites parts about them is, everyone can pick what they want in theirs. Some may want it all, potatoes, carrots, onions, celery, garlic, while others like just potatoes and onions. It is an easy meal to make because it involves just chopping some vegetables.

I personally like potatoes and other vegetables in mine, I love the flavors when they cook together! I also like extra garlic on mine. My husband likes his spicy. My daughter likes extra butter and my son likes his anyway we cook them. He is easy to please.

The steps to this are easy, just chop vegetables into small pieces, slice some butter, season packets before you close them. If you are adding meat, cut it up and put it in the packets. Make sure the packets are closed securely, they need the steam from the butter to cook so if it is escaping, it will take longer to cook.

I have used heavy duty foil and regular foil, they both work fine, just use a little extra care with regular, it is easier to poke holes in it. If you get a hole, just wrap another piece of foil around the original package.

Foil packets go great with grilled chicken! I have had them with chicken cooked in them also. Other meats that I have tried cooked in them with the vegetables are turkey kielbasa and hardwood smoked chicken sausage.

Ingredients

  • One potato per person, cleaned and chopped

  • 2 carrots per person, chopped

  • 2 stalks celery per person, chopped

  • 1 chopped onion

  • Garlic powder or minced garlic

  • Seasoning salt

  • 1/2 TBSP butter for each packet

  • Black pepper

  • Red pepper flakes

Directions

  1. Heat BBQ to medium heat

  2. Lay foil on table, top each piece of foil with potatoes, carrots, celery, onion, seasoning salt, butter, black pepper, red pepper flakes (if desired)

  3. Fold foil over potatoes and vegetables, make sure it is closed securely

  4. Put on grill, I put mine on the top rack, cook for about 15 - 20 minutes, open and make sure vegetables are fork tender. Be careful, hot steam will come out
