Vanilla Funnel Cake

I love to have dip and dessert night with my friends. We get to try new recipes, hang out and talk and our kids get to play. This recipe was one of our biggest hits with the kids. They absolutely loved it. The adults loved it also, so we ended up making a few batches so we had enough. Each one turned out different, you might want to make a little extra batter your first time so you can can experiment with the times. I like mine extra crunchy so mine stayed in the pan a little longer. Some like more powered sugar, others less, so it is easy to do what everyone likes with this recipe!

This is a quick recipe, clean up probably took the longest because we got a little messy with the powdered sugar, but it was well worth it. I do not know how we could make clean up easier, besides not make as big of a mess but I do not see that happening, the sugar was everywhere! This recipe is a really fun one to make, mess and all. It was fun putting the batter in the pan, everyone loved to see how each one turned out!

We did not use an actual funnel for this cake, we used a condiment container and cut the end off so it would pour a bigger line of batter. We were going to use a funnel, but then we decided it would be easier to use the condiment container because we could pour more batter in it and let it sit between pans, instead of having to empty the funnel after each time. Using the condiment container was extremely easy. You can find them in the baking aisle at the grocery store. Ours was clear one, but they make some yellow and red for mustard and ketchup, those would be fine too. Just make sure you cut the time off so you do not have only a little tiny bit of batter coming out, that would take forever!

It was a lot of fun to watch it cook also, you can see it turn brown and puff up. It cooks really fast so make sure you are paying attention! We use a wide wire basket spatula to get them out of the pan, that way they did not break apart.

My one word of advice while making this recipe, do not try the batter before you cook it. You will not like it. Take it from me. We tried it the first time we made it and thought we would hate the end result. Luckily we did not, but the uncooked batter does not taste good! It tastes wonderful after cooked, and that is all that matters.

To make this a fun recipe for the kids, have different toppings available, like hot fudge, bananas, blueberries, strawberries, homemade whipped cream, sprinkles, little candies, the ideas are really endless! It goes good with a side of ice cream also!

Vanilla Funnel Cake

Ingredients

  • Vegetable oil

  • 2 eggs

  • 1 1/2 cups milk

  • 3 TBSP sugar

  • 2 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 TBSP vanilla extract

  • 3 TBSP powdered sugar

Directions

  1. Heat a deep pan or a pot on the stove at medium-high heat with a couple inches of oil in it.

  2. While the oil is heating, combine the eggs, milk and sugar, stir. Next, add the flour, baking soda and salt and stir until well combined.

  3. Pour batter in condiment container, put it over the pan and point it down. Start making circles with it, do this until it is how big you want. Cook for about 2 minutes, then flip it over, it should be golden brown, cook for another minute, then remove and place on paper towels.

  4. Top with powdered sugar, only dusting it.

Fill 4 quart pot (8-inches in diameter) with 2 inches of vegetable oil and heat to 360 degrees over medium heat.

In a medium mixing bowl, whisk the milk, eggs, and sugar together. Add the flour, baking powder, and salt and mix until smooth. Mixture should be thin enough to easily go through a small kitchen funnel. Test it over the mixing bowl and if it’s too thick, mix in more milk; if too thin, mix in a little more flour.

Place your finger over the bottom of the funnel and fill it with 1/2 cup of batter. Hold the funnel over the pot of hot oil and remove your finger to release the batter into the oil while moving the funnel in a circular motion and then every which way so it’s all connected. Fry until golden brown (1-2 minutes), carefully flip with tongs, and fry the second side until golden (about 1 minute). Remove and drain on paper towels. Sprinkle with lots of powdered sugar, top with strawberries and enjoy warm.
