Teriyaki Chicken and Cabbage

My daughter has always been a picky eater. She says she does not like new foods, even before she tries them. Luckily she likes chicken and I was finally able to convince her to try teriyaki chicken, she loves it! The hard part is getting her to actually try different foods, she ends up liking a lot of it, once she gets past the thought of eating different food. So I guess she is not really a picky eater but instead just picky about what she tries. I am glad she is trying more food now and she is actually liking it.

The great thing about this recipe is, everyone can take the foods they like so nobody is forced to eat things they do not want. That always helps when I am trying to get my kids to try new things. They do not like the looks of some foods so they will not try them. It is frustrating but I think most kids have weird ideas about food. I figure they will get over it one day and figure out what they are missing. Luckily both of my kids will eat cauliflower and broccoli so I can get them to eat most of the vegetables with this meal. Cabbage is a sometimes yes, sometimes no vegetable.

Teriyaki chicken is a quick and easy meal to make any night. We love cabbage so we usually have it with cabbage and other vegetables. Last night when we had it, we also had cauliflower, broccoli, onion and garlic. I made rice to go with it, but I do not eat rice. Sometimes we also make noodles. You can use yakisoba noodles or even just thin spaghetti noodles. You can use any vegetables your family likes, and have rice or noodles, or just the meat and vegetables. I usually just have the meat and vegetables but sometimes noodles sound good too. I like to grate carrots in mine also, but did not do that last night. My daughter wants to try vegetable noodles so we will attempt that next time!

I use chicken breast for mine, but any chicken will work, whatever you have and like! Sometimes I use fresh vegetables and sometimes I use frozen, it just depends on what looks best in the store.

I do not mix everything together, not everyone wants everything so I cook it separately and let everyone pick what they want. I also do not put too much sauce on it, anyone that wants extra can put more on.

To make it faster at dinner time, during the day I chop and clean the vegetables and I cut the chicken. Then I can just throw it in the pan when it is time to cook. I love quick dinners.

I like to make extra for leftovers sometimes. It makes good leftovers as long as you do not overcook the vegetables. They will turn mushy if they are cooked too long. I do not like mushy vegetables so I take them out of the pan when when they are warm but still a little crisp. I like them to have bite to them still. Cook yours how you like them done.

If you have kids like I do that are hesitant to try new foods, offer it to them separately. With this meal I put all the food in different sections of my kids' plates and they can decide how to eat it. Sometimes they like to put it all together and sometimes they do not. But I at least offer all the food to them, hoping they will at least try it. If they do not like it the first time, wait a while and make it again. My kids forget that they "did not like" different foods so they will try it again and like it. Sometimes I have to do this several times, but so far they have liked most of the foods eventually. Also, if I can get one of them to like a food, the other usually follows and ends up liking it also.

Teriyaki Chicken and Cabbage

Ingredients

  • 2 chicken breasts, trimmed and cut into small pieces

  • 1/2 TBSP coconut oil

  • 1/2 head cabbage, rinsed and chopped

  • 1/2 onion, chopped

  • 2 TBSP minced garlic

  • 1/2 head cauliflower, rinsed and chopped into small pieces

  • 2 stalks broccoli, rinsed and chopped

  • sauce : 1/4 cup teriyaki sauce, 2 tsp soy sauce, 1 tsp oyster sauce, 2 tsp garlic powder, 1/2 TBSP stir fry sauce

  • other vegetables

  • rice, noodles

Directions

  1. Put 1/2 coconut oil in pan, heat until liquid, add chicken

  2. Cook chicken for about 2 minutes, stir

  3. Cook another minute, stir, add enough sauce to cover chicken, stir

  4. Cook 2 more minutes, check to make sure chicken is done, take out of pan, put on a plate and cover with foil

  5. Wash pan, put the rest of the oil in, let warm. Then add onion. Let cook for 2 minutes add garlic. Let cook for one minute, add cabbage, cauliflower and broccoli. Add 2 tsp of sauce. Cook until done, about 10 minutes, depending on how done you like yours

  6. If you want rice or noodles, start cooking them when you start the chicken

  7. Put vegetables in a bowl and let everyone make their own plates/bowls. Leave extra sauce out for people that want more
