Slow Cooker Spaghetti Sauce Chicken

This meal is perfect for days when you do not have a lot of time, it is fast and easy to prepare then your slow cooker does the rest of the work. You can put it in the slow cooker in the morning and by dinner time you have a wonderful meal. The chicken goes well with pasta, in a casserole, on a roll with melted cheese over it or even by itself! And it makes excellent leftovers so make sure you make a little extra for lunch or dinner the next day. I like to have it for dinner the first night then make it into a casserole the next night, it is very versatile!

It is so easy, you do not even have to defrost you chicken, simply put spaghetti sauce in a slow cooker, then place the chicken in. Then spoon some of the sauce over the chicken and let it cook. I let mine cook about 8 hours on low and it comes out perfect.

For the spaghetti sauce, I used two cans of Hunts spaghetti sauce, mushroom flavor. It is a cheap sauce but it tastes great after it cooks all day, plus I add some garlic, black pepper and some parmesan cheese to give it a little more flavor. You can use any seasoning you want, red pepper flakes are good if you want a little spice. I also cut up onion and add it to the sauce and sometimes use garlic powder.

I used chicken breast this time, but chicken thighs and chicken legs are great in it also. We love it with dark or white meat. Try what you like best!

When the chicken is fully cooked, I take it out and cut it up into large chunks, but you can also shred it, just depending on how you like it and what you are using it for.

You can also eat it the way it is, if you want less sauce. If I am making sandwiches, I usually slice it up but do not put it back in the slow cooker, I do not want the rolls soggy. Instead, I put the chicken on rolls, put some mozzarella cheese on top and bake it or broil it for a few minutes and serve it with bowls of sauce.

Next I place it back in the slow cooker and let it soak up some of the sauce into the chunks. This does not take long, usually 10 - 15 minutes is enough. If you are not ready to eat yet, put it on warm and let it soak a little longer. I have left it in the slow cooker for a couple of hours on warm and it was delicious.

Ingredients

  • 2 chicken breasts

  • 2 24 oz cans spaghetti sauce

  • 1 TBSP minced garlic

  • 1/2 onion, chopped

  • 2 tsp black pepper

  • 1/4 parmesan cheese

  • Optional - pasta, rolls, mushrooms, vegetables

Directions

  1. Put spaghetti sauce, garlic, onion, black pepper and parmesan cheese in slow cooker

  2. Put chicken in slow cooker, spoon some sauce over chicken

  3. Cook on low for about 8 hours, remove chicken, cut into chunks, place back in slow cooker for 10 - 15 minutes
