One Pan Beef and Cabbage

I love fast lunches, I usually do not have time to make anything complicated for lunch, I have too much to do during the day! This recipe is quick, easy and healthy. It looks less than 20 minutes for all of it to cook and since it only requires one pan, clean up is quick too!

I almost always have either ground beef, ground turkey or some chicken in my refrigerator, any of those work great with this meal. I also always have chopped cabbage and cauliflower. I chop it when I buy it so I don't have to do it each time I want to cook with it. I have noticed, if I have a whole head of cabbage and cauliflower in the fridge, it may not get used, but if it is chopped and I can just reach in a grab what I want, it always gets used. I love both so I cook with them a lot, so it just makes sense to chop them and put them in bags or containers so they are ready to use.

I also chop other vegetables to have ready, like onions. I use onions every single day so I always keep some sliced and some chopped so I can have them ready to use. It makes lunch and dinner prep go much faster. And they usually make me cry so I would rather only do it once!

One Pan Beef, Cabbage and Cauliflower

Ingredients

  • 1 lb lean ground beef (or turkey or chicken)

  • 1/2 head cabbage, chopped

  • 1/2 head cauliflower, chopped

  • 1/2 onion, sliced

  • 1 TBSP minced garlic

  • 1 tsp black pepper

  • 1/4 cup beef broth

Directions

  1. Cook hamburger until done, about 10 minutes

  2. Add the rest of the ingredients, cook an additional 10 minutes with the lid on pan, add more broth or water if needed
