Roasted Garlic Cauliflower

I always have cauliflower, I try to have fresh but sometimes I run out, so I always keep frozen cauliflower in the freezer. It is a great tasting and quick vegetable. Roasted cauliflower is one of my favorites, and I love how easy it is.

I use fresh cauliflower to make roasted cauliflower, I have never tried to use frozen so I am not sure if it will turn out the same. I cut my cauliflower into large chunks, rinse them, then I toss them with olive oil. Next, I add some minced garlic, garlic salt and black pepper.

You can then cook it right away or let it sit for a while. I usually get it mixed together and let it sit for a few hours before I cook it. The garlic flavor really comes out!

I cook the cauliflower at 400 degrees, that seems to be the perfect temperature. The inside gets nice and warm and the outside turns a little brown. The great thing about roasting vegetables is, you can change the seasoning depending on what you want. You can also try ranch cauliflower, replace the garlic, salt and pepper with dry ranch seasoning, it is delicious! I have also made spicy, I added cayenne pepper to the garlic version. I have also marinaded the cauliflower in a teriyaki sauce mixture when we have made teriyaki chicken, it turned out very good! The possibilities are endless!

Roasted Garlic Cauliflower

Ingredients

  • 1/2 head of cauliflower

  • 1/2 TBSP olive oil

  • 1 TBSP minced garlic

  • 2 tsp garlic salt

  • 1 tsp black pepper

Directions

  1. Heat oven to 400 degrees

  2. Chop cauliflower into large chunks, rinse

  3. Mix cauliflower with oil, then add the rest of the ingredients

  4. Put on baking sheet

  5. Bake for 25 minutes or under cauliflower done to your liking
