Christmas Sprinkle Cake Mix Cookies

Making cookies from scratch can be a time consuming process, but there is an easier way to have fresh, hot out of the oven cookies, use cake mix! All you have to do is add a few ingredients, mix and bake. It is so simple and they are delicious!

We decided to make Christmas Sprinkle cookies to see if we like the way the sprinkles turned out. We loved them. They are cute, delicious and so easy to make. I always have at least one box of cake mix, and I always have eggs and oil so this is an easy and fast treat to make without having to go to the store for special ingredients. My kids enjoyed helping, they cracked the eggs and added everything to the bowl then stirred. I put the cookies in the oven and took them out then transferred them to a wire cookie rack. Not all of my cookies are the same size, but my kids have so much fun helping in the kitchen, I do not mind everything not being perfect. If you want them all the same size, use a small scoop to make sure they are.

These cookies freeze good so you can make them ahead of time and simply thaw them before you need them. Makes party planning much easier! I love to get as much done before the day of a party as possible. You want to be able to enjoy the party too!

The great thing about cookies like this is, you can change them for any occasion. You can chance the colors of the sprinkles depending on what you are making them for, or you can omit the sprinkles all together and add chocolate chips or other candies. We have tried chocolate chips and chocolate chunks and they both turned out amazing. Next we are going to make some with Reese's peanut butter cups. I already know they will be delicious. We might use a milk chocolate cake mix when we make those.

The possibilities are really endless when it comes to combinations for cake mix cookies, so pick a cake mix, add in some fun if you want, and bake! You can also frost the cookies once they have cooled, cream cheese frosting goes great with them! You can change the flavor of the cream cheese frosting by using extracts! Peppermint is great for Christmas cookies.
