Slow Cooker Beef Vegetable Soup

My whole family loves soup, this one is one of our favorites. Everyone likes it, even both kids. That hardly ever happens. But this soup has a great flavor and the best part is, you can cook it in your slow cooker/crock pot. You can also cook it on the stove if you prefer, but keep the heat low so the beef comes out tender.

The great thing about using a slow cooker instead of the stove is, you can put all the ingredients in and leave it until it is time to eat. The only ingredient I do not put in at first is the potatoes, I do not like it when they over cook. If you can not add them after 6 hours, you can simply boil some when the soup is almost done. Or you can leave them in larger chunks so they do not cook as fast.

If you do decide to cook it on the stove, you can follow the recipe below, just put it on a low heat, with a lid. If you want to cook it faster, you can use a dutch oven, but the meat may not be as tender. It turns out very tender in the slow cooker, but if you are short on time, it will still be fine.

I like mine to have a lot of vegetables, if you prefer more meat, you can either add more meat or cut down on the amount of vegetables. Just make sure you have enough broth so it can cook in it.

You can make this recipe your own by changing the vegetables or seasoning, it is delicious with any vegetables and sometimes I add a little spice to it. You can also use ground beef or ground turkey with this recipe, both are delicious also.

I love soup so I have tried it with many different vegetables and meat. This is my favorite way to make it, but I also love it with cauliflower, broccoli and mushrooms. Ground beef and ground turkey are good too, they make it a different meal.

If you want to make it a little spicy, or a lot, add some cayenne pepper or red pepper flakes. The amount will depend on how spicy you want it. Add a little at a time so you can try it. If you put too much in, there is no way to take it out!

This goes great with cheesy garlic bread, which is very easy and quick to make. It also goes good with rolls and salad. Or by itself. It is a filling meal!

 

Slow Cooker Beef Vegetable Soup

Ingredients

  • 1 lb cubed beef stew meat

  • 1/2 onion, chopped

  • 2 TBSP minced garlic

  • 4 carrots, peeled and chopped

  • 3 stalks celery, chopped

  • 3 potatoes, cleaned and chopped

  • 2 cups frozen corn

  • 2 cups frozen green beans

  • 2 tsp black pepper

  • 1 TBSP tomato paste

  • 6 cups beef broth

Directions

  1. Put all ingredients, except potatoes, in slow cooker, stir

  2. Cook on low for 6 hours, add potatoes, cook for additional 2 hours
