Taco Bean Soup

Soup is pretty much the best meal ever. It is very versatile and can be made out of pretty much anything. I started making this soup because I had too much taco meat leftover and did not know what to do with it. I decided to try to make a soup, it was a hit! Now I frequently make this soup with our leftovers. It works well with hamburger, ground turkey or chicken taco meat.
I cook the meat a day ahead of time, usually for a taco dinner. I use homemade taco seasoning that you can find here, but you can also use store bought. I like making my own because I can control the spiciness and I also like knowing what is going into my food. Plus, it is really easy! I used to always forget to buy taco seasoning packets so this works better for me.

I start by chopping some onion and slicing up a few carrots. I put them in the pan first, they need to cook a little before you add the rest of the ingredients. I do not add oil to cook them in, but you can if you would like. I also do not season the carrots and onions, the taco meat has plenty of seasoning on it.

Next, I put everything else in the pan and stir to combine it. I then let it cook for a little while and try the broth to make sure it is seasoned right. Sometimes I add a little garlic powder, but usually it is perfect the way it is. You could also add more red pepper flakes if you want its spicier.
You can also use any types of beans that you have. I also always have black beans and white beans, so that is what I usually use. I also use frozen corn since it will be cooking for a little while.

You can serve this soup over rice if you like, some people in my house eat it that way and love it! I like to put fat free sour cream and some cheese on mine. I love monterey jack cheese, it melts wonderfully! I also like to use some tortilla chips sometimes when I eat the leftovers, it usually thickens a bit after it has been in the refrigerator and it is perfect for dipping chips in!
You can top this soup with anything that sounds good to you, or eat it as is, it really does need anything else, it is so flavorful!

Taco Bean Soup
Ingredients
1 lb taco meat, cooked and seasoned
1/4 cup onion
1/2 cup sliced carrots
1 can roasted green chiles
1 15 ounce can low sodium black beans
1 15 ounce can low sodium white beans
1 10 ounce can low sodium petite diced tomatoes
1 packet ranch
2 cups corn
4 cups chicken broth
1 tsp black pepper
Optional toppings - sour cream, cheese, guacamole, tortilla chips
Directions
Put onions and carrots in pan, cook on medium for about 7 minutes or until tender
Add the rest of the ingredients, except toppings. Let simmer at least 30 minutes
Serve, top with desired toppings
