Oven Roasted Pulled Pork

Pulled pork is one of my favorite kinds of meat to serve when we have people over, not only is it delicious, but it is extremely easy. I love that it starts cooking earlier in the day and all that is left when it is time to eat is to shred the meat.

I make a dry rub and I let the meat marinade in it overnight. This way, it is juicy and full of flavor. I also set aside a little of the rub so that I can add it to the cooked, shredded meat. It turns out perfect.

Cooking meat all day means that nobody has to take time away from guests to go cook meat while trying to entertain. This means a lot to me. I try to find food that can be cooked ahead of time and served when people are ready to eat.

I also love that it has amazing flavor, it is a little spicy but not too spicy for kids. Everyone eats it when we serve it, it is hard to find a food that can accomplish that!

Another great thing about pulled pork is, people can eat it how they like. Below is a picture of a roll with pulled pork and coleslaw. That is one option, there are many more. Some like pork on tortillas so I always get small street taco flour tortillas and I also get small rolls for kids. Some people do not like to eat rolls or tortillas so they eat it plain. It is so versatile! We have also put it in macaroni and cheese. That is always a hit! The leftovers taste as good as the original meal, so make extra!

Some good ideas to go with this meal, that can be made ahead of time are green beans, macaroni and cheese, pea salad, and pasta salad.
