Creamy Peanut Butter Pie with Chocolate Topping

Creamy Peanut Butter Pie with Chocolate Topping is one of the easiest pies you will ever make! And one of the most delicious. The peanut butter is fluffy and creamy, thanks to a few other ingredients and the chocolate topping makes it the perfect dessert.

When I hear the word pie, I think that it sounds complicated, most pies are quite a bit of work, but not this one. This one can be made even easier with a store bought crust if you do not want to make your own. I have done both, it is delicious either way. I have found that I love disposable pie pans, I could not find my pie pan so I bought some foil ones and I love them! I can send them home with people and not have to worry about not getting my pan back. If I keep them, I wash them and reuse them. They are usually good for several pies. You can use any kind of graham cracker or cookie (such as Oreo) that you like. I usually use what I have on hand. I have even used my kids brownie flavored goldfish crackers! I prefer graham cracker or cookie crusts instead of traditional pie crust so any of them work for me.

You can also use store bought whipped cream if you like. I love making my own, I think it tastes better and I always have the ingredients on hand. With this recipe, it says 2 cups but I always make more so we can put some on top also. Pie needs whipped cream on top!!!

The hardest part of this recipe is to remember to take out the cream cheese to soften. Luckily, it does not take very long because I usually forget. Once the cream cheese is softened,simply mix it with the peanut butter. Next, add the boxed instant pudding and stir. Then add the milk and use a mixer to make it nice and fluffy. I refrigerate it next for a little while so that it is easier to spread the chocolate topping on.

The other hard part is waiting for it to firm up enough to eat. We have cut slices before it was actually firm enough, it is still very good but it is hard to get out of the pan. But sometimes kids cannot wait any longer....

To make the chocolate topping put whipped cream and chocolate chips in the microwave. I have used milk chocolate chips and semi-sweet chocolate chips, they are both very good but I always like the milk chocolate chips the best. Then just pour it on the pie and spread it around!

I used creamy peanut butter in this recipe. It is the only time I use creamy peanut butter, but it is very delicious in this pie. You can also use crunchy peanut butter, it turns out fantastic that way also.

Creamy Peanut Butter Pie

with Chocolate Topping

Ingredients

  • 1 1/2 cups graham crackers, Oreos, chocolate graham crackers, finely ground

  • 6 TBSP butter, melted

  • 1 8 oz package cream cheese, softened

  • 1/2 cup creamy peanut butter

  • 1 3.4 oz box of vanilla instant pudding

  • 1 cup milk

  • 2 cups whipped cream, homemade recipe here

  • 1/3 cup chocolate chips

Directions

  1. Combine finely ground crackers or cookies with butter, place in pie pan. Using fingers, press down on the bottom and the sides of the pan evenly. Place in refrigerator

  2. Combine softened cream cheese and peanut butter

  3. Add box of pudding, stir

  4. Add milk, then use mixer for about 1 1/2 minutes or until well blended

  5. Add 1 cup of whipped cream and stir together, put in crust, smooth top until it is even, put the pie back in the refrigerator

  6. After pie has firmed, at least 1 hour in the refrigerator, combine 1 cup whipped cream and the chocolate chips in microwave safe bowl, microwave for 1 1/2 minutes, stopping to stir occasionally

  7. Pour chocolate mixture over pie and spread evenly. Refrigerate until cool, at least 3 hours
