Crockpot Cheesy Hashbrown Casserole

When I think of comfort food, I think of things like cheesy dishes, potatoes, filling foods. This casserole fills all those perfectly, plus it is cooked in the crockpot so you can start it in the morning and enjoy it at dinner time. Perfect!

You can make this for a regular weekday dinner or make it for a party, that's the great thing about making it in your crockpot, it will stay warm for quite a while so it can sit out. You can also cook it on high for about 3 - 4 hours or low for around 8 hours so you have options. I usually cook it on low since I like to have as much done as possible for dinner as early as possible.

This can be a side dish or a main dish. For a side dish you can cook it as the recipe says, but for a main dish you can add meat to it, ham is wonderful in it, so is chicken, sausage, hamburger and polish sausage. You can also add vegetables, it is really good with onions in it but my kids have a tendency to not always like onions so I do not always put them in. You could also add green peppers, asparagus, green beans, mushrooms or any other vegetable that will cook in the same amount of time as the casserole.

You can also use any cheese you like, we usually use cheddar, sometimes we add some mozzarella in but it is also really good with pepperjack, colby and havarti. If you want a little spice, pepperjack is perfect!

I spray my crockpot with non stick spray or use oil, but there is usually still some mess in it. Just let it soak for a little while in hot, soapy water and it should come right out. Or use crockpot liners, then there should be no mess to clean.

This is a great dish for holidays like Christmas or Easter, when you have a lot going on and do not want to spend all day cooking. Just mix everything, put it in the crockpot and let it do it's thing until dinner time! This is also when cooking on high comes in handy, we usually eat holiday dinners early so instead of getting up really early just to start the crockpot, cook it on high so it will be done faster.

Hashbrown Casserole

Ingredients

  • 36 ounces frozen hashbrowns

  • 8 ounces sour cream

  • 2 cups cheddar cheese

  • 1 stick melted butter (1/2) cup

  • 1 can cream of chicken soup

  • salt

  • pepper

Directions

  1. Mix all the ingredients together, spray crockpot with non stick spray then put ingredients in crockpot

  2. Cook on high for 3 - 4 hours or low 8 hours, potatoes will be tender when done

  3. Let sit for 15 minutes before serving, it will thicken up a little
