Low Carb Meat and Vegetable Casserole

Low carb eating does not have to be boring, there are a lot of ways to be creative with a meal and keep it lower carb. This recipe is low carb meat and vegetable casserole, it is a lot like a spaghetti bake but with vegetables instead of noodles. I do not even miss the noodles when I have this. The vegetables tastes delicious from being cooked in the sauce and the cheese brings it to a whole new level.

Sometimes you just need some comfort food and this meal is exactly that. It is nice and hearty, you won't be hungry after you eat it. You can bulk it up even more with different vegetables, maybe some green peppers, zucchini, asparagus or anything else you have on hand.

The ricotta mixture is a wonderful flavor, when you cut into the casserole the ricotta starts to mix with the sauce and it is absolutely amazing. I love ricotta. I love how fluffy and delicious it is. It brings such great flavors to the food it is cooked with. I try to always have a big container so I can add it to pizza, casseroles or other meals.

 

Low Carb Meat and Vegetable Casserole

Ingredients

  • One pound hamburger or ground turkey/chicken

  • 2 cups green beans

  • 2 cups mushrooms

  • 2 cups ricotta cheese

  • 1 egg

  • 1/4 cup parmesan cheese

  • 1 cup spaghetti sauce

  • 1 cup cheddar cheese

  • 1 cup mozzarella cheese

  • 1 TBSP garlic powder

  • 1 tsp black pepper

  • 1/2 small onion

Directions

  1. Cook hamburger until done

  2. Combine ricotta, egg, 1 tsp garlic powder, 1/4 cup mozzarella cheese, set aside

  3. Combine all other ingredients, except cheese, in bowl, place half in an oven safe pan, top with ricotta mixture then place the rest of the sauce mixture. Top with remaining cheese

  4. Cook in oven at 350 degrees for 30 minutes, let sit for at least 15 minutes before serving
