Ham, Cheese and Cauliflower Casserole

This is a low carb meal, but you do not have to be on a low carb diet to enjoy it. It tastes just as good as it looks! I love cauliflower so I will eat it in pretty much any form. Add some cheese and ham? Yes please! It does not take very long to prep so you can make it any day of the week. You can use a head of cauliflower, but to save time I usually use riced cauliflower, I get huge bags of it at Costco so I have plenty for several casseroles.

Sometimes I like to add vegetables to this casserole also. Green beans taste so good in it! They absorb the flavors of the casserole as they cook, so they taste amazing! Adding vegetables makes it a whole meal, which is very convenient when I am running short on time.

Another nice this is, pretty much any cheese works with it. I love cheddar and mozzarella so I usually have those but I have also tried it with provolone and it was wonderful. If you want a little spice, try some pepperjack.

You can make this casserole ahead of time and just bake it when it is time to eat, it holds up well for at least a day in the refrigerator. It also makes wonderful leftovers, it does not dry out when it is reheated, so make extra to enjoy the next day for lunch!

Cauliflower Casserole

Ingredients

  • 5 cups riced cauliflower

  • 2 cups ham, cubed

  • 3 cups shredded cheese, divided

  • 1 cup sour cream

  • 1/4 cup green onions, chopped

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 2 tsp garlic powder

Directions

  1. Cook riced cauliflower in microwave for 4 minutes or until tender

  2. Place riced cauliflower in food processor, pulse until smooth, add sour cream, salt and pepper, pulse again until mixed

  3. Place in large bowl, add ham, 1.5 cups cheese and green onions, mix well, top with remaining cheese

  4. Place in baking pan, cook at 350 degrees for about 25 minutes or until bubbly

  5. Let sit for at least 15 minutes before serving
