No Cook Pimento Bean Dip

I love dips, they are one of my favorite foods. Most are not very waist friendly, but this one is not bad, it is made from beans! It can be used with vegetables, crackers, chips or anything else you like to dip. I used whole wheat Ritzs with it. They went together perfectly!

Dips are perfect for parties, dinners at home or something to take with you somewhere. This recipe is easy to double, or even triple, if you have a lot of people to feed. And since it is mostly beans it should fill everyone up and they should stay full for quite a while!

It does not get much easier than this recipe, simply drain a can of white beans, then add all the ingredients to a food processor and pulse until it is done. I used my Ninja and had to scrape the sides a few times. You also might have to add a little extra oil or some water if it is too thick or not mixing well.

You can change this recipe by using things other than pimentos, you could try other vegetables or more spices. If you like a spicy dip, add some red pepper flakes or cayenne pepper. Make it something you love, test it as you go and see what you think you could add to make it perfect for you.

 

No Cook Pimento

Bean Dip

Ingredients

  • 1 can white beans

  • 1 TBSP chopped pimentos

  • 2 tsp extra virgin olive oil

  • 1 tsp garlic powder

  • 1/4 tsp salt

  • 1/4 tsp black pepper

Directions

  1. Drain liquid from beans

  2. Put all ingredients into food processor, pulse until blended well. Chill then serve
